At Levo Vineyard, we believe the magic of fine wine is beneath our feet. We farm for living soils, knowing that when the foundation is alive, everything above it can rise. LEVO means to lift, to raise, to elevate—a philosophy that guides our busy hands in the vineyard and cellar, always reaching toward something greater.

THE FUTURE

In an ever changing climate, we believe Paso Robles has the opportunity to become one of the world’s great Mediterranean wine regions. By embracing drought-tolerant varieties, regenerative farming, living soils, and responsible water stewardship, we can work with our environment rather than against it. In the cellar, our role is simply to preserve what the vineyard has already given us. We favor infusion over extraction, neutral vessels—large-format oak, concrete, and ceramic— to allow the character of the vineyard to remain at the forefront. We are not seeking to make bigger wines, but more transparent ones: wines of energy, purity, texture, and a place that could come from nowhere else. We believe this is the future of Paso Robles—not an imitation of another region, but the fresh expression of the place we call home.
